So my stepdaughter turned 15 the other day and as with teenagers they don't know what they want has the time and change their mind the other half. I asked her what she wanted and it was a game for her new switch and to make a rainbow cake. Can you guess what we are making for this recipe? It also is important to note that she made the cake and frosting with just a little guidance from me.
There are so many things you can do with a white cake recipe. If you ever wonder how they make those rainbow cupcakes with multicolored frosting, wonder no more! The kiddo also had the choice of frosting and she went with cream cheese frosting. Also I never claimed to be a baker so my cake decorating skills aren't the best. But practice makes perfect so we will keep practicing that part.
Ingredients
- 1/2 cup unsalted butter at room temp.
- 1/2 cup canola oil
- 1 1/2 cup sugar
- 4 eggs at room temp.
- 1 Tbsp vanilla extract
- 3 cups Flour
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1 1/4 cup buttermilk at room temp
- Frosting
- Parchment paper
- 4" cake pans
- Pam or butter
- Food coloring
Directions
1. Preheat oven to 350F
2. Cut circles of parchment paper and place in the bottom of the cake pans. Grease the sides with Pam or butter.
3. Cream together butter, oil and sugar.
4. Add eggs, one at a time.
5. Add vanilla.
6. In separate bowl mix together flour, salt and baking powder.
7. Slowly add flour mixture and buttermilk to the egg mixture. Alternating between the flour mixture and the buttermilk.
8. Divide batter into how every many colors you want for your cake and add food coloring to each.
9. Pour into pans and cook for 30-35 minutes. Temperatures may vary based on thickness of layers and ovens.
10. Let cool in pans for 10 minutes before flipping and taking cakes out of pans. Allow to cool completely before leveling, frosting and stacking.

- 4 cups powder sugar
- 1/2 cup butter at room temp.
- 8 oz cream cheese at room temp
- 3 tsp vanilla
Directions
1. Beat cream cheese, butter and vanilla until blended.
2. Slowly add powder sugar and mix until well blended.
The important part of cake making is to make sure everything is at room temp or colder. If you try to frost a cake while it is warm then the frosting will just melt. To assemble the cake, level the layers so you have a uniform cake. You will want to but a layer of frosting between each layer.
Once you have layered the cake apply a layer of frosting to the outside. This initial layer is called the crumb layer. Its purpose is just to make a smooth surface for the final layer of frosting. Once the crumb layer (it will most likely have crumbs in it and that is normal) has been established you can apply the final layer and decorate as you wish.
Note: I didn't have 6- 4" pans so we baked the layers in batches. I only had four so we had to do 4 colors then another cook of 2 colors. I also prefer to use food color gel instead of the liquid for a more vibrant color. Just have to be very careful as the gel tends to dye the skin.
