Why do Tacos only have to be on Tuesday?

Why can't we have a taco Monday or Wednesday? Is there a specific food for every day of the week? Oh well despite the cliche today is Taco Tuesday!!!! There are some complex recipes that one can make for tacos but there are also some very simple recipes. Today's is just a nice simple recipe of ground beef (bison in this case) tacos. I tend to go over board but when you have a 3 month old, you take what you can get.


And wouldn't you know I lost the photos I took. Sigh, it's one of those weeks eh?


Without further ado,


Ingredients

- 1 lb ground beef, chicken, (I used bison)

- Cumin

- Fresh or powdered garlic, if fresh, mince

- Onion Powder

- Refried Beans

- Tortillas of choice

- Shredded Cheese

- Sour Cream

- Iceberg lettuce

- Diced tomato (use fresh)

- Bacon grease

- Julios Seasoning (It's a Texas thing)


Directions

1. Cook meat in a pan. Season with cumin, garlic and onion powder.

2. place a paper towel in a bowl or on a plate. Dump cooked meat on paper towel to soak up grease. Set aside.

3. In same pan, or another if you want to cook it at the same time. Cook refried beans (I simply use a can of them) with a bit of bacon grease and Julio's Seasoning. You could also season with cumin and some salt.

4. Warm tortillas, try to do it on the stove in a pan instead of the microwave.

5. Serve with toppings of choice and enjoy!



Note: For seasoning the meat there is no real measurement. Unless you are baking I tend to season to taste instead of measuring the seasonings. Every person likes a different taste and I have a salt sensitive palette. So everything that tastes right for other people is too salty for me.


Also a good note for any meal. If you won't have everything ready at the same time or won't be serving right away, store cooked items in the oven. Briefly turn the oven on broil till it gets fairly warm inside. Turn it off and use the heat stored inside to keep items warmed until serving. Make sure any items that might dry out, are covered.
