You wanted breakfast!

Another simple recipe that can be modified to suit any individual. The breakfast burrito! It is such a simple recipe that I make a big batch for my family to have a few days in a row. Never gets old!

Filling

Ingredients

- Jim Dean Maple Breakfast Sausage

- Eggs

- Milk

-salt and pepper

Directions

1. Cook sausage till it is cooked all the way through.

2. Place in a bowl with a paper towel to drain fat and set aside.

3. Crack eggs into a separate bowl and mix with a fork to scramble them.

4. Season eggs with salt, pepper and a little milk (makes the eggs more creamy).

5. Pour eggs into same pan that you cooked the sausage in. Slowly cook, occasionally stirring.

6. Once eggs are mostly cooked add sausage back into pan.

7. Cook until all eggs are cooked through.

Note: You don't want to cook the scramble eggs too fast or they will become rubbery. You also don't want to over stir them. The trick to perfect scramble eggs is a low to medium heat and occasnially stir them. Also you don't have to use milk. I have cooked it with heavy cream too but I prefer milk because it is what I normally have on hand.

You can also keep the sausage and the egg separate if you prefer. For my family, we eat it all anyways and it saves from having another dish that we will have to store and clean.

Assembling Burrito

Ingredients

- Tortilla (Flour)

- Sour Cream

- Salsa

- Cheddar Cheese

- Sausage and egg mixture

Directions

1. Assemble however you want! With whatever ingredients you want.

2. To roll follow the pictures. You want to make sure you don't over stuff the burrito or you won't be able to roll it.

Some other things that you can add to are veggies. To soften them up heat some oil in a pan and sauté the veggies till they are tender. Also for this recipe I went with 1 package of sausage to 8 eggs. We will be eating off of it for a while but its one less thing we have to prepare early in the morning before work. Enjoy!
